Ingredients
3 Frozen Chicken Strips
1/4 Cup Marinara Sauce
3 Mini Bell Peppers diced
1/4 Cup Shredded Italian Blend Cheese
3 tsp Italian Seasoning
1 tsp Onion Powder
1 egg-life wrap
2 spritz Olive Oil Spray
2 tbsp Broccoli microgreens
Preparation
Cook chicken strips per package instructions. I used the air-fryer for approximate 15 minutes
While the chicken is cooking
Seed and dice up the mini bell peppers
Make the "Faux Noodles"
Cut up the egg-life wrap in strips to your preferred width
Spritz a medium skillet with Olive Oil Spray. Place them in the skillet and stir sauté them for 3 to 5 minutes
Place the "faux noodles" in the bottom of your serving dish
Spread the diced mini bell peppers over the top of the "faux noodles"
Pour half of the Marinara over the "faux noodles"
Sprinkle the Italian Seasoning and Onion Power on top
Cut the cooked chicken strips into bite size pieces and spread them over the "faux noodles"
Spread the remaining Marinara over the chicken
Sprinkle Italian cheese over the top
Cook in the microwave for 1 - 2 minutes to melt the cheese
Top with broccoli microgreens
