Deconstructed Eggroll

Ingredients

  • 1 - 2 pounds ground sausage of choice (Turkey, Pork, etc)

  • 1.5 Tbsp Sesame Seed Oil

  • 1.5 Tbsp White Rice Vinegar

  • 2 Tbsp Low Sodium Soy Sauce

  • 1 Tbsp Minced Garlic

  • 1 - 2 Tbsp Ground Ginger

  • 1 - 2 Tsp Red Pepper Flakes (Optional)

  • 1 - 2 Tsp Onion Powder (Optional)

  • 2 Large Eggs

  • 2 Bags Coleslaw Mix

  • Preferred microgreens

  • Optional Add Ons

    • Sesame Seeds

    • Low Sodium Soy Sauce

    • Hot Honey

Preparation

  • In a heated deep everyday pan pour the Sesame Seed oil and add the ground sausage. Cook until done.

  • Lower the heat and add the White Rice vinegar, Low Sodium Soy Sauce and stir until combined.

  • Make a well in the center of the pan. Crack the eggs in the well and scramble. Once done combine with the mixture.

  • Add the remaining seasonings to the mixture.

  • Add the bags of Coleslaw. Cover to steam for 5 to 10 minutes stirring occasionally to keep from scorching.

  • Serve it up on a pretty plate and top with your preferred microgreens (I used Red Cabbage) and other optional add ons.
