Ingredients
1 - 2 pounds ground sausage of choice (Turkey, Pork, etc)
1.5 Tbsp Sesame Seed Oil
1.5 Tbsp White Rice Vinegar
2 Tbsp Low Sodium Soy Sauce
1 Tbsp Minced Garlic
1 - 2 Tbsp Ground Ginger
1 - 2 Tsp Red Pepper Flakes (Optional)
1 - 2 Tsp Onion Powder (Optional)
2 Large Eggs
2 Bags Coleslaw Mix
Preferred microgreens
Optional Add Ons
Sesame Seeds
Low Sodium Soy Sauce
Hot Honey
Preparation
In a heated deep everyday pan pour the Sesame Seed oil and add the ground sausage. Cook until done.
Lower the heat and add the White Rice vinegar, Low Sodium Soy Sauce and stir until combined.
Make a well in the center of the pan. Crack the eggs in the well and scramble. Once done combine with the mixture.
Add the remaining seasonings to the mixture.
Add the bags of Coleslaw. Cover to steam for 5 to 10 minutes stirring occasionally to keep from scorching.
Serve it up on a pretty plate and top with your preferred microgreens (I used Red Cabbage) and other optional add ons.
