
Ingredients
1/2 pound large shelled shrimp
1 package Hearts of Palm Spaghetti
1/2 cup 2% cottage cheese (blended to smooth)
1/4 tsp granulated garlic
1/4 cup parmesan cheese
1/2 tbsp preferred Pesto
Red Pepper flakes to taste
Salt and pepper to taste
Preparation
Boil water to cook shrimp. It cooks quick
While that comes to a boil, in a bowl place the remaining ingredients. Blend well. Place in the microwave in 30 second intervals until heated through
Place shrimp in salted water to cook until pink (approximately 3 - 5 minutes
Place Hearts of Palm Spaghetti on microwavable safe plate and heat to desired temperature
Strain shrimp out of water and add to pesto alfredo sauce
Pour shrimp pesto alfredo over Hearts of Palm Spaghetti. Top with preferred microgreens. (pictured with Red Cabbage
