
Ingredients
A mini waffle maker is the best way to cook chaffles.
Non-stick cooking spray or oil spritzer
3 oz preferred Chicken (canned, rotisserie, baked)
1 large Egg
1 Tbsp whipped Cream Cheese
2 Tsps diced Jalapenos
1/4 cup shredded Mozzarella Cheese
2 slices Pepper Jack Cheese
2 Tbsps Pizza Sauce
2 Tbsps preferred microgreen

Preparation
Preheat mini waffle maker
Prepare preferred chicken. Shred, rinse, drain. It needs to have as few lumps as possible
In a small bowl, combine the prepared chicken, whipped cream cheese, jalapenos, and egg. Mix well
Spritz mini waffle maker
Place approximately 1/4 Tbsps shredded cheese around the edges of the mini waffle maker
Spoon approximately 1/8 cup of prepared mixture in the center of the mini waffle maker
Top with approximately 1/4 Tbsps shredded cheese. Close carefully. Let it cook for 2-4 minutes. DO NOT OPEN! Let it cook until the light indicator shows it is done. I flip it and let it cook for an additional minute or so for optimal crispness
Repeat with the remainder of the prepared mixture. Mine made 3 chaffles
Place on microware safe plate. Top with pizza sauce and pepper jack cheese. Cook for 1-2 minutes until cheese is melted
Top with preferred microgreens
